Gluten-Free Banana Oat Waffles

You are in for a treat today! Waffles for dinner are one of my favorite things. A couple of weeks ago, a friend of mine pointed me in the direction of these healthy Gluten-Free Banana Oat Waffles from Kim’s Cravings.

I was a little skeptical because I am a huge fan of buttermilk waffles. But lately, I have been trying to avoid processed flours. I don’t think I have a gluten intolerance at all, but I find that when I avoid processed foods, I feel SO much better. These gluten free waffles are nothing short of a food engineering feat in my opinion. Who would guess that you can blend together bananas, oats, eggs, milk, a little maple syrup and baking powder and get fluffy, soft (or crispy depending on how long you cook them) tasty waffles?

My friend, Cyle, pointed me toward this recipe and I am so glad she did. These waffles are crisp, but tender and oh so satisfying and won’t leave you hungry a few hours later. Nor will you feel a sugar rush. I find that with traditional waffles, I feel jittery after I eat them. That won’t happen with these Gluten-Free Banana Oat Waffles! They are packed with wholesome ingredients.

Then there are so many ways you can customize this recipe with toppings. Get creative! Berries, bananas, pecans, fruit syrup, maple syrup, nut butters and more make perfect additions. I topped mine with a drizzle of almond butter and maple syrup and then threw on some berries. So, so good! You could even leave the maple syrup, vanilla, and cinnamon out of the mix and make them to go with savory things, too.

I promise you will not be able to get enough of these tasty waffles. They are the perfect healthy indulgence for a weekend brunch but are also quick and easy enough to make on a weekday, too. They freeze well, too. So make a big batch and freeze them for quick breakfasts.

Gluten-Free Banana Oat Waffles

Gluten-Free Banana Oat Waffles (adapted from Kim's Cravings)

Ingredients

  • 2 cups gluten free old fashioned rolled oats
  • 1 cup almond coconut blend milk or milk of your choice
  • 1 teaspoon pure vanilla extract
  • 2 eggs
  • 1 medium ripe banana
  • 1 teaspoon baking powder
  • 1 TBSP maple syrup or more to suit your taste
  • 1 teaspoon cinnamon optional
  • Toppings: fresh fruit maple syrup, nuts, nut butter, etc.

Instructions

  • Place all ingredients (except the toppings) in a blender and blend until smooth. The batter will be a little bit thinner than traditional waffle batter.
  • Heat a waffle iron on medium high to high, depending on how crisp you want them. I do mine on high.
  • Grease the waffle iron generously.
  • Pour about 1/3 to 1/2 cup of batter onto the iron.
  • Cook according your waffle iron's manufacturer guidelines.
  • Waffles can be kept warm in a 200 degree oven. Place them on a baking sheet on a single layer.
  • Serve immediately, or cool and freeze.
