Place all ingredients (except the toppings) in a blender and blend until smooth. The batter will be a little bit thinner than traditional waffle batter.
Heat a waffle iron on medium high to high, depending on how crisp you want them. I do mine on high.
Grease the waffle iron generously.
Pour about 1/3 to 1/2 cup of batter onto the iron.
Cook according your waffle iron's manufacturer guidelines.
Waffles can be kept warm in a 200 degree oven. Place them on a baking sheet on a single layer.
Serve immediately, or cool and freeze.
