You know that I am a big fan of happy hour, because of the cocktails involved. But, I also love happy hour for the food. Give me appetizers every night for dinner, please!

I’m starting a new series here where I will give you recipes and ideas for serving up happy hour snacks. I’ll still be sharing cocktails, but now, you will have some delicious nibbles to go with them! Let’s get started with these Mini Waffles with Pimento Cheese.

What’s not to like? Crispy, tender waffles paired with creamy, cheesy goodness are a match made in heaven. I make my Pimento Cheese with pepper jack cheese for an extra kick. It’s very easy to make and you only need a few ingredients. If you don’t have time to make your own, you can buy yummy pimento cheese made by Proper Pepper (made here in Georgia) or Palmetto Cheese.

The waffles are my standard breakfast waffle recipe, but I lowered the sugar and omitted vanilla extract. You can buy fancy mini waffle irons, but I simply use my regular size iron and just fill it about 1/3 of the way. This gives me nice little waffles that I cut into fourths to make cute mini waffle triangles. I top them with a small scoop of pimento cheese and serve them up with a tasty beverage like a Pink Grapefruit Gin Fizz.

Ingredients

    For the waffles:
  • 2 eggs, beaten
  • 1 3/4 cup buttermilk
  • 1/2 cup oil
  • 2 cups unbleached all-purpose flour
  • 1 tsp sugar
  • 4 tsp baking powder
  • 1/4 tsp salt
  • For the Pimento Cheese
  • 8 ounces sharp cheddar cheese, grated
  • 8 ounces pepper jack cheese, grated
  • 1 clove of garlic, finely minced
  • 2 oz jar pimentos
  • 1 scant cup Duke's mayonnaise, or more if desired
  • Salt and Pepper

Instructions

    To make waffles:
  1. Heat waffle iron to medium high. In a small bowl, combine the eggs, buttermilk and oil. In a larger bowl, combine the flour, sugar, baking powder and salt. Add the egg mixture to the flour mixture and whisk until smooth.
  2. Add a small ladle of waffle batter to the iron. Don't fill the whole iron. Just fill it about 1/3 of the way. Cook according to your iron's instructions or until the waffle is crispy. Remove to a baking sheet. Repeat until all the batter is used. Waffles can be made ahead and reheated in the oven to crisp them up.
  3. To make pimento cheese:
  4. Combine the cheeses, garlic, pimentos (with the brine) and mayo. Use more or less mayo, depending on your taste. Add salt and pepper to taste. Stir until well mixed. Chill for at least 30 minutes.
  5. You can omit the brine if you like a drier pimento cheese.
  6. To assemble this snack:
  7. Cut waffles into quarters.
  8. Use a small cookie scoop to scoop pimento cheese onto waffles.
