Simple Black Bean and Corn Salsa

Yesterday, I went to a little meet-up of local creative women entrepreneurs. It was so great to sit and chat with like-minded artists. We talked about our businesses, our families and or course, Instagram.

We all brought a little healthy snack to munch on while we chatted. I put together this Black Bean and Corn Salsa to take and share. It’s super easy to throw together at the last minute and it’s delish! Pair it with some tortilla chips and a tasty Paloma and it just might elevate your entire day.

Simple Black Bean and Corn Salsa

Ingredients

  • 1 can of Black Beans, rinsed and drained
  • 1 can of Petite Diced Tomatoes. drained
  • 1 cup of frozen White Corn Kernels, thawed
  • 1-2 TBSP of chopped pickled Jalapeños
  • 1-2 TBSP of finely chopped cilantro
  • Juice of 1 Lime
  • Salt

Instructions

  1. Combine the rinsed and drained black beans and tomatoes in a large bowl. Add the corn, jalapeño and cilantro. Squeeze the juice of one lime over the bowl and stir to combine. Add salt to taste. Serve with your favorite chips or use the salsa to top grilled chicken.
