Dinner on chilly nights calls for deep bowls of hot soup. Weeknight dinners call for quick and easy recipes. This recipe for Tortilla Soup with Black Beans I found via Martha Stewart fulfills both of those demands.  Bonus: this soup is meatless and super affordable to make.

Except when I am baking, it’s not often that I follow a recipe to the letter. But, I followed this one because it’s pretty simple. I wanted to see if a quick and basic recipe would be tasty. I was pleasantly surprised by this Tortilla Soup recipe.

The simple ingredients in this tortilla soup include fresh garlic, chili powder, canned tomatoes, canned black beans, a can of broth, frozen corn, crushed tortilla chips and a squeeze of lime. Add salt and pepper to taste and that’s it! I did add cilantro and sliced fresh jalapeños as garnishes. You can garnish with other things like sour cream and shredded cheese, too. I thought it was delish without all that, but a little sour cream never hurt anyone, right?
