I love ALL food and drink things Mexican, so Cinco de Mayo is one of my favorite days of the year. I love the flavors and freshness of good Mexican food. And of course, I love margaritas.

Origins of the Margarita Cocktail

Did you know that margarita is the Spanish word for daisy? It is believed that the margarita originated from a drink invented in the 1800s called the “daisy.” This drink consisted of spirits mixed with grenadine, citrus juice, and soda water then poured over shaved ice. It is thought that the margarita evolved when some someone mixed a daisy using tequila, orange liqueur, lime juice and a bit of soda.

Today, most margaritas are made with a combination of lime juice, triple sec (or some kind of orange liqueur), tequila and a touch of sugar or simple syrup. Margaritas can be served on the rocks in glass with or without a salted rim. Frozen margaritas are made when the cocktail ingredients are mixed up in a blender with ice.

How to make Cucumber Margaritas

For this tequila cocktail recipe, I combined fresh flavors of cucumber and lime to make one beautiful and tasty margarita. It takes a little bit of prep to make the cucumber juice, but it is so worth it. The juice gives this drink a refreshing taste and it looks pretty, too.

To prepare the juice, take one whole, slightly peeled English cucumber and chop it into chunks. Then, put it in the blender with a couple of tablespoons of fresh lime juice. Blend it until it is smooth. Next, pour it through a fine-mesh strainer to remove any bits that didn’t get completely blended. Finally, pop that juice into the fridge to chill.

When it’s time to make your Cucumber Margaritas, combine ice, cucumber juice, tequila, triple sec and lime juice mixing glass. Stir briskly for ten seconds and then pour into an ice-filled rocks glass. Garnish with lime slices and/or cucumber slices. 

Tips for making a great Margarita:

  • Use good tequila. It’s worth it. I like Espolòn blanco, Tequila Cabeza, or Patron Silver.
  • Use fresh squeezed lime juice.
  • Have plenty of fresh limes on hand for garnishing, rimming glasses with salt and squeezing for juice.
  • Make the cucumber juice ahead of time, so it has at least 30 minutes or more to chill.
  • Salt only half the rim of your glass. You only need a little bit!

Ingredients

  • 2 ounces cucumber juice
  • 1.5 ounces silver tequila
  • .5 ounce triple sec
  • 1.5 ounces fresh lime juice

Instructions

To make cucumber juice:

  • Partially peel one English cucumber and chop roughly.
  • Add to a blender with a couple of tablespoons of water (or lime juice). Puree until well blended.
  • Strain through a fine mesh strainer.

To make the cocktail:

  • In a mixing glass filled with ice, combine cucumber juice, tequila, triple sec and lime juice.
  • Stir briskly for ten seconds and then pour into an ice-filled rocks glass.
  • Garnish with lime slices and/or cucumber slices.
