Cinco de Mayo: Cucumber Margaritas
This Cucumber Margarita recipe combines fresh flavors of cucumber and lime to make one beautiful and tasty margarita. It takes a little bit of prep to make the cucumber juice, but it is so worth it.

- 2 ounces cucumber juice
- 1.5 ounces silver tequila
- .5 ounce triple sec
- 1.5 ounces fresh lime juice
To make cucumber juice:
Partially peel one English cucumber and chop roughly.
Add to a blender with a couple of tablespoons of water (or lime juice). Puree until well blended.
Strain through a fine mesh strainer.
To make the cocktail:
In a mixing glass filled with ice, combine cucumber juice, tequila, triple sec and lime juice.
Stir briskly for ten seconds and then pour into an ice-filled rocks glass.
Garnish with lime slices and/or cucumber slices.
