Ingredients
1 1/2cupsunbleachedall-purpose flour
1teaspoonbaking soda
1/2teaspoonsalt
1/2teaspooncinnamon
1cupsoft butter
3/4cupbrown sugar
3/4cupwhite sugar
2eggs
1teaspoonvanilla
3cupsoatsI use Old Fashioned Rolled Oats
1 1/2cupsbutterscotch morsels
Instructions
Pre-heat oven to 375 degrees. Combine flour, soda, salt and cinnamon in a small bowl. Set aside. In the bowl of a mixer, cream the butter and sugars until fluffy. Add eggs one at a time. Add vanilla. Next, add in the flour mixture and mix until incorporated. Mix in the oats and chips. Drop by rounded spoonfuls onto a parchment lined baking sheet. I use a 1 TBSP cookie scoop and bake a dozen cookies on one sheet.
Bake for 8-9 minutes for chewy cookies or 10-12 minutes for crispy cookies. Cool at least one minute on the baking sheet before transferring. Do not forget to use parchment paper to line your pan or you will end up being very sad.
