Heat an iron skillet to medium heat. If using a panini press, follow the manufacturers guidelines.
Layer ingredients on a slice of bread, beginning and ending with cheese. I cut my cheese slices in half so that I would have half on the bottom and half on the top. Then top with another slice of bread.
Spread butter on the outsides of each slice of bread.
Place the sandwich in the pan and cook until the bread is slightly browned. Then flip to the other side.
Serve warm.
