Oatmeal Scotchies:12 Days of Christmas Cookies 2014

Ingredients

  • 1 1/2 cups unbleached all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup soft butter
  • 3/4 cup brown sugar
  • 3/4 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups oats I use Old Fashioned Rolled Oats
  • 1 1/2 cups butterscotch morsels

Instructions

  • Pre-heat oven to 375 degrees. Combine flour, soda, salt and cinnamon in a small bowl. Set aside. In the bowl of a mixer, cream the butter and sugars until fluffy. Add eggs one at a time. Add vanilla. Next, add in the flour mixture and mix until incorporated. Mix in the oats and chips. Drop by rounded spoonfuls onto a parchment lined baking sheet. I use a 1 TBSP cookie scoop and bake a dozen cookies on one sheet.
  • Bake for 8-9 minutes for chewy cookies or 10-12 minutes for crispy cookies. Cool at least one minute on the baking sheet before transferring. Do not forget to use parchment paper to line your pan or you will end up being very sad.
