Cauliflower Salad with Grapefruit Viniagrette

Ingredients

For the dressing:

  • 1/2 cup olive oil
  • 1/4 cup Apple Cider vinegar
  • 1/8 cup Grapefruit juice
  • Juice of one lime
  • 1/2 tsp dry mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper

For the salad

  • 1/2 head of cauliflower sliced very thin
  • 1/4 head of red cabbage sliced very thin
  • 2 Granny Smith apples sliced very thin
  • 3 green onions chopped
  • 1.2 cups walnuts

Instructions

  • In a jar with a tight fitting lid, combine dressing ingredients. Shake until well combined.
  • In a large bowl or on a large platter, combine salad ingredients.
  • About 30 minutes before serving, toss salad with a small amount of dressing (about a 1/3 of a cup) to start. Add more dressing as desired.
  • Serve immediately.
