Chili Lime Chicken Skewers

Ingredients

  • 1/4 cup olive oil
  • Juice of one lime
  • 3-4 cloves of garlic chopped
  • 1/2 small red onion thinly sliced
  • 1/4 cup cilantro chopped
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp coarse salt
  • 1/2 tsp ground back pepper

Instructions

  • Soak wooden skewers in water for at least an hour. Longer is better. This keep them from burning on the grill.
  • Combine olive oil through black pepper in a large glass bowl. Stir well.
  • Cut chicken into long thin slices, about 1/2 inch wide. Toss chicken into marinade and set in the refrigerator for at least an hour.
  • Heat grill to high. Grill the skewers 3-5 minutes per side, until the chicken is fully cooked.
  • Serve hot.
