Soak wooden skewers in water for at least an hour. Longer is better. This keep them from burning on the grill.
Combine olive oil through black pepper in a large glass bowl. Stir well.
Cut chicken into long thin slices, about 1/2 inch wide. Toss chicken into marinade and set in the refrigerator for at least an hour.
Heat grill to high. Grill the skewers 3-5 minutes per side, until the chicken is fully cooked.
Serve hot.
