Shrub ingredients:
- 2 cups sugar
- 2 cup apple cider vinegar
- 2 cups mixed berries
Mocktail Ingredients
- 2 oz shrub
- .5 oz fresh lime juice
- 3 oz club soda
- Fresh berries for garnish
To make the shrub:
Combine sugar and vinegar in a small saucepan. Heat over medium heat and stir until sugar dissolves.
Add berries and let mixture simmer for 15-20 minutes, until berries are cooked down.
Remove from heat and cool to room temperature.
Pour the shrub into a clean jar with a lid. Refrigerate for 24 hours or longer, up to a week.
Strain the shrub with a fine mesh strainer. Shrubs last in the fridge for several weeks and will mellow in flavor over time.
