Berry Shrub Mocktail

Who says that mocktails have to be boring? I'm giving you a sure-fire booze-free recipe that is anything but the same old, same old club soda with lime. This Berry Shrub Mocktail recipe is the epitome of refreshing.

Ingredients

Shrub ingredients:

  • 2 cups sugar
  • 2 cup apple cider vinegar
  • 2 cups mixed berries

Mocktail Ingredients

  • 2 oz shrub
  • .5 oz fresh lime juice
  • 3 oz club soda
  • Fresh berries for garnish

Instructions

To make the shrub:

  • Combine sugar and vinegar in a small saucepan. Heat over medium heat and stir until sugar dissolves.
  • Add berries and let mixture simmer for 15-20 minutes, until berries are cooked down.
  • Remove from heat and cool to room temperature.
  • Pour the shrub into a clean jar with a lid. Refrigerate for 24 hours or longer, up to a week.
  • Strain the shrub with a fine mesh strainer. Shrubs last in the fridge for several weeks and will mellow in flavor over time.

To make one mocktail!

  • Pour shrub and lime juice into a glass with ice.
  • Add in club soda. Stir.
  • Garnish with fresh berries.
