Paleo No-Bake Brownie Bites

Paleo No-Bake Brownie Bites are a healthier way to satisfy your sweet tooth. These vegan chocolatey, chewy treats are bite-sized and super simple to make. Gluten, dairy and grain free make these dessert bites perfect for all diets!

Ingredients

  • 1 cup dried figs stems removed
  • 1/2 cup raw cashews
  • 1 cup almond butter
  • pinch of salt
  • pinch of cinnamon
  • 3 TBSP maple syrup
  • 1/4 cup unsweetened cocoa powder
  • crushed toasted coconut for coating
  • finely chopped pistachios for coating
  • cocoa powder for coating

Instructions

  • Prepare coatings: use food processor to crush toasted coconut or finely chop pistachios (or any other nut of your choice). Then make the brownie bites.
  • Add all of the ingredients to the bowl of a food processor.
  • Process until mixture comes together and forms a dough-like consistency. The mixture will be grainy.
  • Scoop mixture by tablespoon and roll into 1" balls.
  • Roll each ball in a desired topping such as crushed toasted coconut, ground pistachios, or cocoa powder.
  • Refrigerate until ready to eat.
