This Super Quick Superfood Chicken Salad is your solution when you need a quick, but hearty healthy meal. Chicken is combined with a host of yummy salad fixings all served atop a seriously delicious super blend of kale, broccoli, green cabbage and colored carrots. 

 

I am not sure if you have noticed, but lately I have been making a lot of dishes that incorporate Mann’s Organic Super Blend slaw. I love it for so many reasons. It comes washed and shredded, so the minute you open the bag, it’s ready to use. No washing. No chopping. I also enjoy that it’s a flavorful blend of so many healthy veggies. It’s a great way to get super food power into your diet.

I recently used it in this recipe for Black Bean and Butternut Squash Street Tacos and in this recipe for 30 Minute Sesame Beef Stir-Fry. I am always looking for ways to incorporate more veggies!

 

 

What is in this Healthy Chicken Salad?

I thought you’d never ask! This enticing salad is filled with these healthy ingredients:

  • Grilled or sautéed chicken breast–To make it even faster, use rotisserie chicken
  • Mann’s Organic Super Blend slaw mix–Just open the bag and fill your bowl
  • Matchstick carrots–Because a few more carrots is always a good idea
  • Green onion–For crunch and a savory punch
  • Unsweetened dried cranberries–For a sweet bite
  • Sunflower seeds–Add a little nutty texture
  • Thinly sliced radishes–They had a crisp freshness to everything
  • A simple Orange Vinaigrette–The perfect balance of acid and sweet. If you are in a hurry you can just use oil and vinegar or your favorite store-bought salad dressing.
  • Fresh chopped parsley–enhances the fantastic flavor of this salad and provides anti-inflammatory benefits.

 

 

 

What are Superfoods?

Superfoods are foods–such as berries, nuts, cruciferous vegetables and salmon–that are rich in nutrients. These foods pack a big punch and are an important component in maintaining health.  Full of antioxidants, vitamins, healthy fats and more, these foods give you a boost in energy as well.

Ingredients

Ingredients for the dressing

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup fresh orange juice
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp dry mustard

Ingredients for the Salad

  • 4 Grilled or sautéed chicken breasts sliced
  • 1 8.5 oz package Mann’s Organic Super Blend slaw mix
  • 1 cup Matchstick carrots
  • 1/2 cup Unsweetened dried cranberries
  • 3-4 Green onions sliced
  • Sunflower seeds
  • Thinly sliced radishes
  • Fresh parsley chopped

Instructions

Make the dressing

  • In a jar with a tight fitting lid, combine all of the ingredients. Tighten the lid and shake jar until dressing is well combined. Refrigerate until ready to use.

Make the salad

  • Divide the slaw mix among four bowls.
  • Divide the carrots and cranberries among the bowls.
  • Garnish each bowl with green onions, some sunflower seeds and radishes.
  • Top each salad with a little of the dressing and gently toss.
  • Serve with chopped parsley.
