Super Simple Chili Supper

A couple of weeks ago, I spoke at my local MOPs (Mothers of Preschoolers) group about the importance of hosting adult gatherings. As Moms we are pretty good about making sure our kids have social outings but often, we forget that we need social outings, too.

Clayton and I have found that we really enjoy having other adults over for simple dinners or sometimes just for drinks and appetizers. I sometimes have just my girlfriends, but lately, we have been hosting couples. It’s really fun to connect with people outside of work or other daily activities. I like connecting with people over food and drinks because pretty much everyone agrees that food is a good thing.

The nice thing is that you don’t have to go for fancy when you entertain. You certainly can if that’s your thing, but it’s not a requirement. I have had fun little shindigs over take out pizza and wine from a box. Really it’s all about spending time with people, not about having a perfect dinner.

One of my favorite menus for having friends over is chili with a toppings bar. It’s yummy and it’s easy. You make the chili a day or two ahead of time. You get a bunch of yummy toppings and accessories. You warm the chili, put out the toppings and have some kind of refreshing beverage on hand. Done and done. Guests can serve themselves and you can relax and enjoy.

I made a little printable that will make this process super simple! I included two recipes for chili. One is made with chicken and the other with beef and beans. You could always leave out the beef if you need a vegetarian option. I also included a shopping list for both recipes and some suggested toppings. Each recipe yields about 6 servings. These are not my recipes, but I have made and eaten them both. The chicken chili has been a staple in my house for years!

I recently served up some of the beef and bean chili with a refreshing Paloma. Palomas are my go-to cocktail right now because…grapefruit juice. And tequila, lime and a little fizzy lifting from soda are good things, too. Super yummy. I’m planning a post with my Paloma recipe, but for now, check out Bon Appetit’s
