Paleo No Bake Brownie Bites are a healthier way to satisfy your sweet tooth. These chocolatey, chewy treats are bite-sized and super simple to make.
Last week I posted a lovely cake recipe, and here I am today with another sweet treat: Paleo No Bake Brownie Bites. Just as I said before, I am all about balance when it comes to what I eat. I would say I eat a healthy, whole food diet 80% of the time. Since I have done Whole30 a couple of times, I tend to gravitate towards eating Paleo. But, I am not super strict about it. The other 20% is where I leave room for things like dessert or snacks, but I still try to make choices that are closer to the healthy side.
This recipe is here because a) I had a ton of dried figs on hand and b) I was looking for a way to satisfy my urges for a delicious brownie while staying on the 80% healthy side.
Healthy Brownie Bites Recipe
So how are these little bites of deliciousness made? You take the following ingredients and put them in your food processor:
- dried figs (pitted dates work well, too)
- raw cashews
- almond butter
- cocoa powder
- maple syrup (or agave, or honey)
- pinch of salt
You process until everything comes together into a kind of dough. Then you roll it into balls. From there, you can coat the balls in crushed coconut, finely chopped nuts (I used pistachios) or cocoa powder. They will keep in the fridge for a week, if they last that long.
These brownie bites are perfect for after school snacks, post work-out snacks and even midnight snacks. They have protein and natural sugars for energy. Even my pickiest eater gave them a big thumbs up! It feels like you are eating a decadent chocolate truffle, but really it’s a powerhouse of whole food goodness.
Paleo No-Bake Brownie Bites
Ingredients
- 1 cup dried figs stems removed
- 1/2 cup raw cashews
- 1 cup almond butter
- pinch of salt
- pinch of cinnamon
- 3 TBSP maple syrup
- 1/4 cup unsweetened cocoa powder
- crushed toasted coconut for coating
- finely chopped pistachios for coating
- cocoa powder for coating
Instructions
- Prepare coatings: use food processor to crush toasted coconut or finely chop pistachios (or any other nut of your choice). Then make the brownie bites.
- Add all of the ingredients to the bowl of a food processor.
- Process until mixture comes together and forms a dough-like consistency. The mixture will be grainy.
- Scoop mixture by tablespoon and roll into 1" balls.
- Roll each ball in a desired topping such as crushed toasted coconut, ground pistachios, or cocoa powder.
- Refrigerate until ready to eat.
