White Chocolate Peanut Butter Ritz Cookies: Day 11 of 12 Days of Christmas Cookies

Today’s cookie is simply this: peanut butter spread between two Ritz crackers and then dipped in GOOD, melted white chocolate. It’s just three ingredients!

It’s messy y’all. I won’t lie. When I started making these cookies, I was completely underwhelmed by the process. I thought they would be really easy to throw together, but they are kind of a pain. I almost gave up after the third one.

Have patience, they are worth it! The end result is pretty darn delicious.

Here’s how it goes. Assemble your ingredients: peanut butter, Ritz crackers and good white chocolate. I really like the Ghirardelli brand.

First, pour an entire bag of white chocolate chips into a microwave-safe, glass bowl. I used a 2 cup measuring glass.

Microwave for 30 seconds and then give it a stir. Repeat until the chocolate is melted and smooth.

Then, get two Ritz crackers, spread a little bit of peanut butter love on one of the crackers and squish the other cracker on top to make a little sandwich.

Pop that sandwich into the melted chocolate. This is where it gets messy.

It just takes some practice to get the whole dipping thing down. I did some Googling and found a couple of tricks. Trick #1 is to get a plastic fork and break off the middle prongs. This will help you to get the cookie out of the chocolate without goo-ing up your fingers.

Trick #2 is to hold the dipped cookie over the bowl of chocolate and gently tap it on the side until a lot of the chocolate comes off the cookie.

My first few cookies came out with a ton of chocolate on them. Not that that is a bad thing. I was able to make about 12 cookies with one sleeve of crackers and one bag of chips. There was a bit of chocolate left over, but not enough to dip. I just ate the rest of the chocolate out of the bowl. Then I dipped a few plain Ritz crackers in it, just to see if it was good. It was.

I ended up with peanut butter in my hair and white chocolate all over the kitchen, but they were worth it. Very tasty. It’s a mouth treat of salty, sweet and crispy. Give them a try and let me know what you think.
