Butter Pecan Shortbread Cookies: Day 7 of 12 Days of Cookies

These buttery pecan shortbread cookies are really amazing! I should have known they would be great because they are a Martha Stewart recipe. I was blown away by their simplicity and their flavor. They only contain 6 ingredients: butter, flour, vanilla, salt, sugar and roasted pecans.

I think the roasted pecans are what give these cookies a huge flavor boost.

When I was researching my cookie project and chose these to make, I was a little worried they would be like Pecan Sandies. Blech. These are definitely NOT like Pecan Sandies. Thank goodness. They are WAY better!

The original recipe says it makes 12 cookies. I was able to eke out about 16. I used a cookie scoop to scoop the dough. Then I rolled the dough into balls and dipped them into sugar.

Yummy, not too sweet, cookies with a rich, roasted pecan flavor and crunch.
