Oven Roasted Pulled Pork Tacos

Did you know that tacos are one of my most favorite things in the world? Well, if not, now you do. And in a few seconds, you are going to have a recipe for one of the easiest ways to make Oven Roasted Pulled Pork Tacos.

There are unlimited ways to make yummy fillings for tacos. You can go old school with ground beef and a packet of taco seasoning. My family actually goes crazy for that. But, I like to be more creative and fresh in my approach to making tacos. I love veggie tacos filled with black beans and sweet potato chunks. I love chicken tacos, too. But, my better half really loves pork and gets really stoked when we find multiple ways to use it in recipes.

I have to give all the props to my hubby for the pork recipe. He loves to smoke meat and make BBQ rubs and sauces. He has mastered pulled pork on the smoker! Today, I was at home alone and I have no idea how to use his smoker, so I modified his usual recipe. I rubbed my pork shoulder with his famous rub and put it in the oven to roast.

You know what? Don’t tell Clayton, but I think my pulled pork turned out PERFECT. After about 4 hours in the oven at 300 degrees, it was super easy to shred.

After shredding the meat, you can assemble your oven roasted pulled pork tacos however you want. I like to smear corn tortillas with a little sour cream then top with the pork. Next, I pile on the fresh toppings such as: sliced jalapenos, thinly sliced red onion, chopped tomatoes and cilantro. Feel free to get creative. You could add cheese, salsa, lettuce and more.

This pulled pork recipe could also be used to make quesadillas, taco salad or BBQ sandwiches. It’s such a versatile recipe!

Pulled Pork Tacos

Ingredients

Pulled Pork

  • 4 lb pork shoulder roast or Boston Butt
  • 2/3 cup brown sugar
  • 1/3 cup paprika
  • 1/3 cup salt
  • ¼ cup pepper
  • 1 TBSP garlic powder
  • 1 TBSP onion powder
  • 1 TBSP cumin
  • 1 TBSP Old Bay seasoning.

Toppings:

  • Sour cream
  • Jalapeno Slices
  • Red onion thinly sliced
  • Chopped tomato
  • Cilantro
  • Lime wedges

Instructions

  • Mix all of the Rub ingredients together. Rub the pork all over with the spice mixture. It will make more than you will probably need. Leftover Rub can be stored in an airtight container for up to six months. Cover roast and refrigerate for at least an hour or up to 24 hours.
  • Preheat oven to 300 degrees.
  • Place pork in a roasting pan. Then bake for about 4 hours or until the internal temp reaches 170 degrees.
  • Shred with two forks. Add salt and pepper to taste.
  • To serve: tuck meat into corn or flour tortillas and add your favorite toppings.
