Valentine’s Day Ombré Sugar Cookies

I am not one of those people is gaga for Valentine’s Day, but I do think it’s fun to acknowledge it in some way. Last year I made Chicken Fajita Nachos for my guys and we had homemade Churros with Chocolate Sauce for dessert. This year, I am not sure what I am making for dinner, but for dessert, I made my boys these fun Valentine’s Day Ombré Sugar Cookies.

I was inspired by these gorgeous Ombre Raspberry Lemon Sugar Cookies by Audra from The Baker Chick. I mean how beautiful are they? And I am sure they are so tasty. I love the sugar cookie recipe from Bake at 350. The dough is a cinch to make and there is no wait time for chilling. Brilliant! The cookie dough is easy to roll out and cut, too.

If you are like me, you have tried more than a few sugar recipes that either leave you cussing or crying (or both!) because it’s too sticky and the cookies are impossible to get from where you cut them out to the pan. That is not the case with this dough. It is so great to work with. The cookies do “grow” a little in the oven, but not much.

The best part is that they taste amazing, too! So, big check marks for this recipe all around.

For the icing, I modified Audra’s recipe. I used everything but the dried raspberry powder and lemon juice. I kept my version pretty basic with vanilla cream cheese icing. To make the different shades, I kept adding more pink food color. I iced 5 cookies with white, then I added a bit of pink and frosted 5 more. I just kept adding more pink each time. They turned out pretty cute, right? I think my fellas are going to LOVE them. What are you baking up for your valentines this year?

Valentine’s Day Ombré Sugar Cookies

Ingredients

For the cookies

  • 3 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1 c sugar I use sugar that I've stored vanilla beans in
  • 2 sticks unsalted butter cold & cut into chunks
  • pinch of salt
  • 1 egg
  • 1 tsp pure vanilla extract

For the icing

  • 4 oz cream cheese softened
  • 12 tablespoons of butter softened
  • 2-3 cups powdered sugar sifted
  • 1 tsp pure vanilla extract
  • pink gel food coloring

Instructions

For the cookies

  • Combine the flour and baking powder, set aside.
  • In the bowl of a stand mixer, cream the sugar and butter.
  • Add the egg and vanilla.
  • Gradually add the flour mixture and beat just until combined, scraping down the bowl, especially the bottom.
  • Dough will be crumbly. Turn it out on a floured surface and knead to combine it.
  • Roll to about 1/4" to 3/8" thick, and cut into shapes. Place on parchment lined baking sheets.
  • Freeze the cut out shapes on the baking sheet for 5 minutes before baking.
  • Bake for 10-12 minutes. Let cookies cool on the pan for about 5 minute and then move them to a cooling rack.

For the frosting

  • Combine cream cheese and butter and beat until smooth.
  • Add in vanilla extract.
  • Gradually beat in powdered sugar until icing is to desired texture. I used 3 cups.
  • Frost 4 or 5 cookies with white frosting. Then add in a little food coloring. Frost 4 or 5 more.
  • Repeat two more times, adding in a bit more coloring each time.
