Black Bean Dip Bites

If I had to pick a favorite meal, it would be really tough to do. I love all kinds of food! But, my favorite style of meal is one made up of different kinds of small bites. I could appetizers every single night. Give me a cheese board or charcuterie plate and I am a happy camper.

This is why I decided to pick three recipes to share with you this month that are perfect for holiday parties or for those nights when you just want to pull out some happy hour snacks. So far I have shared Proscuitto Wrapped Asparagus and Caprese Skewers with Basil Vinaigrette. The last recipe in this trio is Black Bean Dip Bites.

These Black Bean Dip Bites are delectable little cups of bean dip topped with salsa verde and cheese. If you like to live on the edge, you can also put a slice of jalapeno on each one. Then they are baked until the dip is bubbly and the cheese is melted. Next, I top them with a bit of sour cream and cilantro.

They are super easy to make and so yummy! Now, you can make all three of these appetizers and a have nice spread for a cocktail party or your Christmas Eve festivities. They would even make a great start to a New Year’s Eve celebration. No matter how or when you make these dishes, your friends and family will be thrilled!

Black Bean Dip Bites

Ingredients

  • 4 packages of mini fillo shells
  • 1 16 oz can of black refried beans
  • 1 16 oz can of black beans, rinsed and drained
  • 1 4 oz can diced green chiles
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • 1 small can salsa verde
  • 1.5 cups of grated cheese (cheddar or Colby jack)
  • Sliced pickled jalapenos
  • Sour cream
  • Cilantro

Instructions

  1. Pre-heat oven to 400 degrees.
  2. In a bowl, combine refried beans, black beans, chiles, cumin, chili powder and salt. Mix well.
  3. Fill each fillo shell with a teaspoon of the black bean mixture. Then place about a half a teaspoon of salsa verde on top. Top each shell with a pinch of cheese. If desired, place a pickled jalapeno slice on top of the cheese.
  4. Place shells on a parchment lined baking sheet.
  5. Bake for 12-15 minutes or until cheese is melted and the tops of the shells are crispy.
  6. Let cool. When ready to serve, add a bit of sour cream to each shell and garnish with cilantro.
  7. For an even quicker dish, spoon black bean mixture into a glass baking dish. Top with salsa, cheese and jalapenos. Bake for 20 minutes. Cool. Top with sour cream and cilantro.

This is a super cool recipe! Also, great presentation. All photos are Instagram feed photos. Thanks for sharing. Sometimes you find a recipe that you want to make it right away and this is one of them :)
